<p>The antioxidants protect the body against pollutants and free radicals, hence help to fight cancer and <span id="more-22"></span>build up your immune system, eat some carrotcake.</p>
<p>Recipe:</p>
<p>NUTTY CARROTCAKE</p>
<p>7oz self-raising flour.<br />
 3 tsp mixed sweet spices.<br />
 1tsp (bicarbonate soda)<br />
 4oz soft brown sugar<br />
 2oz desiccated coconut<br />
 2oz broken walnuts<br />
 4oz butter<br />
 4oz sultanas<br />
 6oz grated carrot<br />
 Grated rind of an orange<br />
 2 beaten eggs.</p>
<p>Mix the first six ingredients.<br />
 Gentle melt the butter, add the sultanas, carrots, and orange. Combine with the dry ingredients, add the beaten eggs and mix thoroughly.</p>
<p>Turn into a lined loaf tin and bake for 50 to 60. minutes, or until a knife inserted into the centre comes out clean.</p>
